Northern Vietnamese Cuisine

Northern Vietnam, with its cooler climate and strong Chinese influence, offers food that is light, balanced, and delicate in flavor. 

  • Less sugar and oil: Dishes are generally less sweet and less oily compared to the South. 
  • Milder seasoning: Northern chefs use fewer spices, allowing natural ingredients to shine. 
  • Saltiness from fish sauce or fermented shrimp paste is common, but never overpowering. 
  • Fresh herbs like dill (thi là) and spring onions are often used rather than strong spices.

About Me – Eva

Founder of Holy Phở

Hello!
My name is Eva – founder of Holy Phở.
I was born and spent my childhood in Hanoi, where mornings often began with the aroma of steaming bowls of phở on small street corners. For many years, I lived away from my parents and grew up with my grandmother, who had more than 30 years of experience cooking for traditional Vietnamese wedding parties. Her tiny kitchen was filled with stories, patience, and the soulful flavors of northern Vietnamese cuisine – and it was there that my passion for food and culture first blossomed.

Years later, I moved to Saigon, carrying with me not just memories of Hanoi, but also a deep love and understanding of Vietnamese cuisine from north to south. Working in tourism and culinary projects helped me see that Vietnamese food isn’t just about famous dishes like Phở, Gỏi cuốn, or Bánh xèo – it’s also about lesser-known local specialties, family recipes, and the cultural stories behind every bite.

That’s why I created Holy Phở: as a tribute to my grandmother’s legacy and as my mission to share the rich, authentic tastes of Vietnam with friends from around the world.
In my classes, you won’t just learn to cook well-known dishes – you’ll also discover hidden gems of Vietnamese cuisine and truly experience the spirit of our food culture.
